Onion Bhajis

Ingredients

1 cup sunflower seeds, soaked

1 cup walnuts, soaked

2 cups red onions

2 tsp paprika

¼ tsp cayenne pepper

2 cloves garlic

1 bunch cilantro

1 red pepper, de-seeded

1 tsp kalonji (black seed)

1 tsp cumin

3 tbsp olive oil

Directions

1. Finely chop red onions and garlic.

2. Chop red pepper and cilantro.

3. Process all ingredients except 1 cup red onions in a food processor using the S-blade.

4. In a bowl, add mixture to remaining onions.

5. Form batter into balls a bit smaller than ping-pong balls.

6. Dehydrate on teflex sheets at 135 degrees for 1 or 2 hours.

7. Remove teflex and continue to dehydrate on mesh for 4 to 6 hours. Balls should be a bit crispy on the outside and soft inside.

Once again, there is no need for deep frying. These are a crowd-pleaser. It’s hard to stop at just one.
